My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and ktmadeit.com was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Roasted Red Pepper & Artichoke Dip


I'm always searching for healthy dips. My friend, Lindsey Brown, gave this to me several years ago ~ it's extremely easy to prepare and tastes delicious!
{ Prep Time: 5 mins / Cooking Time: 2o mins / Difficulty: Easy / Yields: about 2 cups }

Ingredients:
1 (12 oz) jar roasted red peppers, drained
1 (14-oz) can quartered artichoke hearts, rinsed and drained
4 green onions, diced
1 (8-oz) bag of Parmesan cheese
1/2 cup light mayo
1/2 tsp garlic powder
tortilla chips or gluten free crackers

Directions:
1. Preheat oven to 350 degrees.
2. In a food processor, pulse the first 4 ingredients together. Add the cheese and garlic powder and pulse until completely combined.
3. Spoon mixture into a shallow glass baking dish and bake for 20 mins, until brown and bubbly.
4. Serve immediately with chips or crackers.
