Crockpot BBQ Chicken

This delicious and ridiculously easy recipe has just been added to my "all-time favorite" recipes! My husband and I absolutely love the chicken - it's super tender and very flavorful. Takes less than 5 minutes to prepare and is ready in less than 4 hours. 

{ Prep Time: 5 mins / Difficulty: Super easy! / Cooking Time: 3-4 hours / Yields: 6 servings }

3-4 lbs. organic chicken breasts
1 cup water
1/4 cup light brown sugar
16 oz of your favorite BBQ sauce (I use Sweet Baby Ray's)
hamburger buns or rolls, if desired

1. Place chicken breasts in the bottom of a large slow cooker. In a small bowl, whisk together the water, brown sugar and BBQ sauce. Pour over the chicken and stir to make sure all breasts are covered with mixture.
2. Cover and cook on high 3-4 hours. Once chicken is done, pull it out of the crockpot and shred immediately using a mixer with the paddle attachment. Or pull apart with two forks. (Note: this is much easier to do when the chicken is still hot!) If desired, place pulled chicken back in the crockpot and mix with the remaining juices. My husband prefers to eat the breasts before they're shredded so I usually shred half of the breasts and leave the others whole. It's really just a personal preference, so do whatever floats your boat!
3. To serve, place shredded meat on a hamburger bun, or eat as is. The chicken is just as good without the bun!
