Here's a gluten free version of an all-time favorite, Sloppy Joe's! We serve ours 'sans buns', but you can serve them on Kaiser rolls if that strikes your fancy.
{ Prep Time: 5 mins / Cooking Time: 20 mins / Yields: 4 servings }
Ingredients:
1 1/2 pounds lean ground beef
1 (14 oz) can petite diced tomatoes
1 yellow onion, finely diced
1 cup ketchup
1/2 cup barbecue sauce
1 Tbsp Worcestershire sauce
2 Tbsp pickled jalapeño peppers, chopped (optional)
1 Tbsp liquid from pickled jalapeño peppers (optional)
Kaiser rolls, or hamburger buns (optional)
Directions:
1. Heat a large dutch oven (or deep skillet) to medium-high heat. Brown the ground beef and diced onions, stirring often, about 8-10 minutes, or until beef is no longer pink and onions are translucent. Drain both the beef and onions & rinse with warm water.
2. Return rinsed beef and onions to dutch oven, and add tomatoes, ketchup, BBQ sauce, and Worcestershire sauce. If desired, add the jalapeño & jalapeño juice.
3. Cover; reduce heat to low and simmer 10 minutes so flavors meld.
