My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and ktmadeit.com was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Peanut Butter Sandwich Cookies


This recipe tastes like a homemade version of the Nutter Butter cookie ~
Peanut butter deliciousness!
{Prep Time: 30 mins / Difficulty: Intermediate / Yields: 44 cookies }

Ingredients:
1 cup butter flavored shortening
1 cup creamy peanut butter
1 cup sugar
1 cup light brown sugar, packed
3 cups all-purpose flour
1/4 tsp salt

Filling:
1/2 cup creamy peanut butter
3 cups powdered sugar
1 tsp vanilla extract
5-6 Tbsp milk

Directions:
1. Preheat oven to 375 degrees. In a large bowl, cream together shortening, peanut butter, and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well.
2. Shape into 1/2" balls and place 2" apart on ungreased baking sheets. Flatten to 1/2" thickness with a fork. Bake at 375 degrees for 6-7 mins or until golden. Remove to wire racks to cool.
3. For filling: in a large bowl, beat the peanut butter, powdered sugar, vanilla and enough milk to achieve spreading consistency. Spread on half of the cookies and top each with another cookie.
