Italian Sausage & Bell Peppers
1 large red onion, quartered
2 large red bell peppers
2 large yellow or orange bell peppers
12 oz artichokes (in olive oil)
2 tsp Italian seasoning
5 chicken or turkey sausage links*
Salt & pepper, to taste
Olive oil cooking spray
1. Preheat oven to 450 degrees. Spray a large rimmed baking sheet with olive oil cooking spray, and set aside. Wash peppers and remove seeds, then cut into quarters. Cut the onion into quarters as well. Put all the sliced veggies into a bowl, lightly drizzle with olive oil (I used just enough so the seasoning would stick), then sprinkle with the dry Italian seasoning. Toss until all veggies are evenly coated.
2. Arrange veggies in a single layer on your prepared sheet, then season with salt & pepper. Roast for 15 mins. Remove from oven and stir veggies, then roast for 10 more mins.
3. Meanwhile, brush a frying pan with olive oil. Set heat to medium and start to brown the sausages. Cook for 15-18 mins, until sausages are nicely browned and heated through. *If you are using pre-made sausages, cooking time will be reduced to 10 mins.
4. Slice the sausages on the diagonal and toss with the veggies.
