I've stumbled upon several really fabulous recipes on Damn Delicious' website. This quinoa dish is definitely going to be an all-time favorite, not only because it's scrumptious, but it's extremely easy to prepare! Just throw all the ingredients in a pan, cover and voila - you have an easy home cooked meal in less than 25 minutes.

Ingredients:
1 Tbsp extra virgin olive oil
2 cloves garlic, minced
1 jalepeno, minced
1 cup quinoa
1 cup vegetable broth
1 (15 oz) can black beans, drained & rinsed
1 (14.5 oz) can fire roasted diced tomatoes
1 cup corn kernels
1 tsp chili powder
1/2 tsp cumin
Kosher salt & fresh ground black pepper, to taste
1 avocado, halved, seeded, peeled & diced
Juice of 1 lime
2 Tbsp fresh cilantro leaves, chopped
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Add garlic & jalepeno, and cook, stirring frequently, until fragrant - about 1 minute.
2. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder, and cumin. Season with salt & pepper to taste. Bring to a boil; then cover and reduce heat. Simmer until quinoa is cooked through, about 20 minutes.
3. Stir in avocado, lime juice & cilantro. Serve immediately.
