My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. The Pioneer Woman's Favorite Cheese Ball

{ Prep Time: 10 mins / Difficulty: Easy / Yields: 12 servings }

1 (8-oz) pkg light cream cheese, softened
1/4 cup light sour cream
1 cup finely shredded cheddar cheese
1/4 cups shredded parmesan cheese
1/4 cups finely chopped green onion
1/2 tsp garlic powder
1 pinch of cayenne powder
1 tsp lemon juice
1/4 tsp freshly ground black pepper
1/2 cups toasted pecans, chopped coarse (optional)
Crackers of your choosing for serving

1. Place all ingredients (except pecans) in a large bowl. Beat with a hand mixer on med-low speed until well combined.
2. Scrape the mixture onto a piece of plastic wrap. Cover with plastic wrap and shape into a ball or log. Put the cheese ball on a plate and place in the refrigerator to harden, about 30-60 mins.
3. Roll the cheese ball in the chopped pecans and place on a serving dish. Serve with wheat thins, ritz crackers or carrs water crackers.

TIP: Place cheeseball in fridge for at least an hour to allow the flavors to blend. Remove from fridge 30 mins before serving.
