No Bake Energy Bites

 
These are extremely easy to prepare - no cooking or baking involved! Just measure out the ingredients, stir to combine, then roll into balls. It's that easy!
{ Prep Time: 10 mins / Difficulty: Super Easy! / Yields: 2 dozen }

Ingredients:
1/2 cup Arbonne protein powder (I used chocolate, but vanilla works too!)
2 Tbsp Arbonne Fiber Boost
1 cup dry organic old-fashioned oats
2/3 cup coconut flakes, toasted
3/4 cup almond butter
1/2 cup ground flaxseed
1/2 cup mini chocolate chips (optional)
1/3 cup honey or maple syrup
1 tsp pure vanilla extract

Directions:
1. Measure out ingredients in a large bowl. Mix until all ingredients are combined. (You may need to add more honey and/or almond butter, depending on consistency. You want them all the ingredients to stick together.) Place "dough" in refrigerator and let chill for about 30 mins (this should make dough easier to form into balls). 
2. Use 1" ice cream scoop (or spoon) to measure out 1" balls. Store in an airtight container for up to 1 week.
