This is a yummy, refreshing salad that's loaded with protein. To me it tastes more like a dessert...but it says it can be used as a side dish. Either way, it's super yummy and light!

3/4 cup dry quinoa
1 pint strawberries, sliced (about 2.5 cups)
16 oz fresh blueberries (about 2 cups)
1 cup cherries, pitted and sliced
For Dressing:
2 Tbsp pure maple syrup
1 tsp balsamic vinegar
1 Tbsp fresh lime juice
pinch of kosher salt
1/2 cup almonds, chopped (optional)
Directions:
1. Cook quinoa according to package directions.
2. Meanwhile, chop fruit and place in a large bowl.
3. Mix the dressing ingredients in a small jar and adjust to taste if necessary. *Note - you may have to double dressing recipe if salad is quite large.
4. Fluff cooked quinoa with a fork and add to large bowl with the fruit. Combine. Pour dressing on salad and mix well. Serve immediately or chill in fridge until serving time.
