Taboule Wheat Salad

{ Prep Time: 10 mins / Difficulty: Easy / Chill Time: 30 mins / Yields: about 4 servings }

1 box of Near East Taboule Wheat Salad
1 cup boiling water
1 Tbsp extra virgin olive oil
1 large roma tomato, diced
1 Tbsp fresh lemon juice
1 cup crumbled feta cheese
3/4 cup cucumber, peeled and chopped
1/4 cup fresh basil leaves, chopped

1. In a large bowl, combine wheat and contents of spice sack. Stir in 1 cup boiling water. Cover; let stand for 30 mins in the refrigerator.
2. Add tomatoes, cucumbers, lemon juice and olive oil. Mix well.
3. You can dive in at this point . . . but it'd be best to cover and chill for at least 1 more hour or possibly overnight.
