Bacon, Egg & Sausage Breakfast Casserole


Happy new year! Here is a delicious casserole that's great for company and relatively easy to prepare. Is great the next day too!
{ Prep Time: 30 mins / Difficulty: Relatively Easy / Yields: 8-10 servings }


Ingredients:
1/2 pound fully cooked chicken or turkey sausage
6 pieces lower sodium bacon
1/2 cup green bell pepper, chopped
1/2 cup fresh mushrooms, chopped
1/4 cup (1/2 stick) of butter, cubed

10 large eggs
1/2 cup all purpose flour
1 tsp baking powder
1/4 tsp salt (optional)
1 (16 oz) container low fat cottage cheese
2 cups finely shredded cheddar cheese
1 cup monterey (or colby jack) cheese
butter flavored cooking spray

Directions:
1. Grease 13x9" baking dish and set aside.
2. Preheat oven to 400 degrees. Line a baking sheet (with edges) with aluminum foil and place bacon, side by side, in single layer. Bake for 15-20 mins, or until bacon is done. * I drain my bacon grease into a glass pyrex measuring cup about halfway through cooking. I drain one more time after bacon is done; then I wait until it's solid to toss it in the trash. I've heard that it's not good to put grease down a disposal!! * Meanwhile, cover a plate with 2 pieces of paper towel and set aside. When bacon is done, remove to plate to soak up any remaining grease. Once cooled, break bacon into small bite-sized pieces.
3. In a medium skillet, over medium-high heat, melt the butter. Add mushrooms and peppers and saute for about 5-7 mins, or until veggies are tender. Meanwhile, combine eggs, flour, baking soda and salt with a whisk in a large mixing bowl. Add mushroom mixture and stir to combine. Stir in remaining ingredients and mix well.
4. Pour mixture into prepared baking dish. Bake, uncovered, for 15 mins. Then reduce oven temperature to 350 degrees and bake 25-30 mins longer or until a knife inserted into the center comes out clean. (Casserole will stay pretty warm if you immediately cover with foil. That way, you can make sure the rest of your breakfast is ready ;-) I cooked some flakey rolls along with this casserole and there weren't any left over! Enjoy.

** If you're preparing this for company, here are a few tips to save you some time in the morning: chop the mushrooms and green peppers the night before. I bought chicken sausage that was fully cooked, so I just had to dice it up. Cook the bacon in advance too. Place these 4 ingredients in plastic baggies or tupperware and place in fridge. The next morning, start at step 3. It will take about 15 mins to prepare at this point. Make sure you give yourself enough time to prep. It will stay warm for at least 15 mins or so once it's removed from the oven. Just cover with foil to keep warm. **
