Peanut Butter Chocolate Cookies

{ Prep Time: 15 mins / Baking Time: 10-12 mins / Difficulty: Easy / Yields: about 3 dozen }

1/2 cup shortening
1/2 cup butter or margarine
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1 tsp baking soda
2 eggs
2 oz unsweetened chocolate, melted and cooled
1 tsp vanilla extract
2 1/4 cups all-purpose flour
2 cups peanut butter cups, chopped in small pieces

1. Preheat oven to 375 degrees. In a microwave-safe bowl, melt unsweetened chocolate in 30 second intervals. (Stir in between each interval to prevent chocolate from burning.) Set aside to cool.
2. In a large mixing bowl, beat shortening and butter/margarine with the electric mixer on medium to high speed for 30 seconds.
3. Add granulated sugar, brown sugar, and baking soda; beat until combined. Beat in eggs, cooled chocolate, and vanilla until well combined. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Stir in chopped peanut butter cups.
4. Drop dough by rounded tablespoonfuls 2 1/2" apart on an un-greased cookie sheet. Bake for 10-12 mins or until tops look dry. Cool on cookie sheets for 1 min. Transfer cookies to wire racks to cool completely.
