My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and ktmadeit.com was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Mint Chocolate Cookies


To me, these mint cookies taste very similar to Girl Scout Thin Mints! It's just a chewy version of the famous cookie.
{ Prep Time: 15 mins + 1 hr for freezing dough / Difficulty: Easy / Yields: 24 cookies }

Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa
1/4 tsp baking soda
1/2 cup packed brown sugar
1/2 granulated sugar
3 Tbsp butter, softened
3 Tbsp unsweetened applesauce
1 tsp vanilla extract
1/4 tsp peppermint extract
1 large egg white, lightly beaten
Butter flavored cooking spray

Directions:
1. In a medium bowl, combine flour, cocoa and baking soda, stirring well with a whisk.
2. Combine brown sugar and then next 5 ingredients in a mixing bowl; beat on high for 2 mins. Beat in the egg white. Add flour mixture, and beat on low speed until well blended.
3. Lightly coat hands with cooking spray. Shape dough into a 6" log. Wrap in plastic wrap; freeze for 1 hour or until firm. (This makes it much easier to slice when the time comes!)
4. Once dough is firm enough to slice, preheat the oven to 350 degrees. Lightly spray baking sheets with butter flavored cooking spray.
5. Cut log into 24 (1/4") slices and place 1" apart on your prepared baking sheet. Bake at 350 for 10 mins. Remove from pans; cool on wire racks.

Serve with a delicious glass of almond milk! Yum!
