Couscous with Cherry Tomatoes & Basil


Couscous is one of my go-to side dishes. I always have several boxes in my pantry for last minute dinners!
{ Prep Time: 5 mins / Cook Time: 5 mins / Difficulty: Easy / Yields: 2 cups }

Ingredients:
1 (5.9 oz) box of 5 minute parmesan couscous
15-20 cherry tomatoes, halved
1 Tbsp fresh basil, chopped
salt & pepper, to taste

Directions:
1. Cook couscous according to package directions. Meanwhile, chop basil and slice tomatoes in half.
2. Combine all ingredients and serve warm or cold. Tastes great with salads too!
