My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Hope you enjoy trying out some of the recipes. Happy cooking!

MAKE-IT-IN-THE-POT-MONDAY: Pulled BBQ Pork Sandwiches

{ Prep Time: 15 mins / Cook Time: 12-14 hrs / Difficulty: Easy / Yields: 8 servings }

1 (2 1/2 lb) pork shoulder roast
1 (14 oz) bottle Jack Daniels barbeque sauce
1 Tbsp fresh lemon juice
1 tsp brown sugar
1 medium onion, chopped
8 sandwich thins, or hamburger buns

1. Place pork roast in your crockpot. Cover and cook on low 10-12 hours or on high 5-6 hours. (If you have the time, I'd recommend cooking the roast on low.)
2. Remove pork roast from crockpot; discard cooking liquid. Shred pork with two forks. Return to crockpot and add barbeque sauce, lemon juice, brown sugar and onion. Cover and cook on low 2 hours or on high for 1 hour.
3. Serve shredded pork on hamburger buns with chips.
