White Bean Salad

{ Prep Time: 10 mins / Difficulty: Easy / Yields: 6 servings }

1 (14oz) can cannellini beans, drained and rinsed
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 small red onion, diced
1 garlic clove, minced
1 tsp oregano
6 Tbsp extra virgin olive oil
5 Tbsp red wine vinegar
kosher salt and pepper to taste

1. Place beans and the next 6 ingredients in a large bowl and set aside. In a small bowl, whisk together the olive oil and vinegar. Season to taste with salt and pepper.
2. Pour the dressing over the bean mixture and refrigerate for an hour, or overnight.
3. Serve chilled or at room temperature.
