My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Strawberry Angel Food Cake

A great, easy, light dessert for spring and summertime!
{ Prep time: 10 mins / Difficulty: Easy / Yields: 24 servings }

1 angel food cake
2 sm boxes (or 1 lg box) strawberry jello
2 cups frozen strawberries in juice (found in freezer section by frozen fruits)
1 (16oz) tub of light cool whip
fresh strawberries for decoration, if desired

1. Break angel food cake into bite-sized pieces and layer in a 9x13" pan.
2. Dissolve gelatin into 2 cups of boiling water, then add frozen strawberries in juice. Just as mixture begins to thicken, fold in 1/2 of cool whip.
3. Distribute jello mixture evenly over angel food.
4. Refrigerate.
5. Before serving, frost cake with remaining cool whip and top with fresh strawberries.
