My Inspiration . . .

I've always had a love for baking, but it wasn't until I was in college that I had a desire to learn how to cook. In 2009, I decided to start my own cooking blog so I could access my recipes from anywhere, and ktmadeit.com was born.

I love trying new recipes and finding ways to make them healthier & happier on the hips! I love everything about food: the taste, the smells, the presentation, the experimenting, etc. I love to entertain, so I figured this was a great way to bring people together. Shortbread Cookies


FYI: You will need a cookie press for this recipe.
** OR ** you can use a pastry bag with a large pastry tip.
{ Prep Time: 15 mins / Baking Time: 6-8 mins /Difficulty: Easy /
Yields: 8 dozen mini cookies }

Ingredients:
1 cup butter, softened
3/4 cup granulated sugar
1 large egg yolk
1/3 cup light sour cream
1 tsp vanilla extract
2 3/4 cup all purpose flour
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 tsp baking soda

For glaze:
2 cups powdered sugar
3 Tbsp milk
1 Tbsp melted butter
1 tsp vanilla extract

Directions:
1. Preheat oven to 375 degrees.
2. In large mixing bowl, beat butter and sugar together until light and fluffy. Beat in egg yolk, sour cream and vanilla. In a medium bowl, sift together flour, cinnamon, salt and baking soda.
3. Gradually add flour mixture to butter mixture. Fill cookie press with dough, then form cookies onto ungreased cookie sheets. Bake 6-8 mins, then remove from oven and cool on pan for 1 min. Remove cookies and place on wire racks to cool.
4. FOR GLAZE: In small bowl, whisk together powdered sugar, milk, melted butter and vanilla. Add milk as needed.
