Grilled Salmon


{ Prep Time: 10 mins / Difficulty: Easy / Yields: 2 servings }

Ingredients:
2 (6oz) salmon filets, skin on
zest and juice of 1 lemon
1 clove garlic, minced
handful of fresh parsley, finely chopped
2 Tbsp extra virgin olive oil
kosher salt & fresh ground pepper (about 1/4 tsp each)

Directions:
1. Heat gas grill to medium-high heat.
2. To prepare the marinade, mix together all the ingredients (except the salmon, of course!) in a small bowl. Place salmon filets in a glass container, skin side down, and cover with marinade. Cover and refrigerate for 30 mins.
3. Place salmon, skin side up on prepared grill, and cook 5-7 mins. Flip and cook 5-7 more minutes. (Skin will stick to grill, which is ok, because you don't want to eat the skin anyway!) ;-) Salmon is ready when it flakes off with a fork.

** Serve with: green vegetables like broccoli, green beans, zuccinni, etc. Grains such as couscous, wild rice, brown rice or polenta.
