Ingredients:
2 cups cornmeal
1 1/2 tsp salt
2 cups boiling water
1 cup cold milk
2 eggs, slightly beaten
2 Tbsp butter, melted
4 tsp baking powder
1 (11oz) can whole kernel corn
Directions:
1. Preheat oven to 475. In a large bowl, whisk together cornmeal and salt. Gradually stir in water until mixture is smooth.
2. Stir in milk, beaten eggs and butter; then the baking powder, then the corn. Pour into a deep greased pie pan (*note* the texture of the mixture will be extremely runny, but that's ok, that's how it's supposed to look!)
3. Bake at 475 degrees (extremely hot oven!) for 25-30 minutes.
4. Serve warm with honey butter.
