Strawberry Cream Cheese Muffins

These muffins are rather dense and filling, but what a sweet way to start your day!
{Prep Time: 20 mins / Difficulty: Easy / Yields: 12 muffins }

3 oz light cream cheese, softened
1/4 cup powdered sugar
2 1/2 cups all-purpose flour
3 tsp baking powder
1/2 tsp salt
1 egg
1 1/4 cups milk
1/2 cup packed brown sugar
1/3 cup butter, melted
1 tsp grated lemon peel
1/4 tsp almond extract
1/4 cup strawberry jam

1. Preheat oven to 375 degrees.
2. In a small bowl, beat cream cheese and powdered sugar until smooth; then set aside. In a large bowl, combine the flour, baking powder and salt. In another small bowl, whisk the egg, milk, brown sugar, butter, lemon peel and almond extract. Stir wet ingredients into dry ingredients, just until moistened. (Keep cream cheese mixture separate - you will use this to fill muffins.)
3. Spray a muffin tin with cooking spray. Spoon half the batter into the greased muffin cups. Top each with 1 Tbsp cream cheese mixture and 1 tsp jam. Top each muffin with remaining batter.
4. Bake at 375 for 18-20 mins or until a toothpick inserted into the center of muffin comes out clean. Cool for 5 mins before removing from pan onto wire racks.
