Sour Cream Pound Cake


{ Prep Time: / Difficulty: Easy / Yields: 12 servings }

Ingredients:
1 stick butter (1/2 cup), softened
1 1/2 cup sugar
1 ripe banana, mashed
1/2 cup greek fage non-fat yogurt
1/2 cup light sour cream
3 eggs
3 egg whites
3 cup oat flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla
3 cup fresh berries (strawberries, raspberries, blackberries)
2 Tbsp powdered sugar

Directions:
1. Preheat oven to 325. Cream butter and sugar in a medium bowl until well blended. Add banana, yogurt, and sour cream. Beat on low until just blended.
2. Whisk together eggs and egg whites in medium bowl. Sift oat flour and next 3 ingredients (through salt) in a large bowl. Add butter and egg mixtures alternately into oat flour mixture.
3. Add vanilla and pour batter into 10" tube pan coated with cooking spray. Bake 1 hr or until toothpick inserted in center of cake comes out clean.
4. Serve warm and top with 1/8 cup berries and 1/2 tsp powdered sugar.
