Hot Artichoke Dip

{ Prep Time: 10 mins / Difficulty: Easy / Yields: 4 cups }

Ingredients:
2 (14-oz) cans quartered artichoke hearts, drained
2 cups fresh Parmesan cheese (plus 1 Tbsp)
1/2 cup light mayonnaise
paprika, for garnish
gluten free crackers

Directions:
1. Measure out cheese and mayonnaise in a large bowl. Puree artichoke hearts in food processor. Mix with cheese and mayonnaise. Pour into a shallow baking dish.
2. Sprinkle top with remaining 1 Tbsp cheese and paprika. Bake at 350 for 20 mins; until bubbly. (Top should be golden brown.)
3. Serve hot with wheat thins.
